Grilled Cheese & Tomato Soup – The Perfect Comfort Meal:

Nothing beats the classic combination of crispy, buttery grilled cheese and warm, flavorful tomato soup. This duo is perfect for a cozy lunch or dinner!

Grilled Cheese Sandwich :

Ingredients:

  • 2 slices of bread (white, sourdough, or whole wheat)
  • 2 slices of cheese (cheddar, American, or Swiss)
  • 1–2 tbsp butter (softened)

Instructions:

  1. Butter the Bread: Spread butter on one side of each slice of bread.
  2. Assemble the Sandwich: Place one slice of bread (butter side down) in a skillet over medium heat. Add cheese slices on top, then place the second slice of bread on top (butter side up).
  3. Grill the Sandwich: Cook for about 2–3 minutes until the bottom is golden brown. Flip carefully and cook for another 2–3 minutes until the other side is crispy and the cheese is fully melted.
  4. Serve & Enjoy: Remove from the skillet, let it cool slightly, then slice and serve with tomato soup.

Tomato Soup :

Ingredients:

  • 1 tbsp olive oil or butter
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable or chicken broth
  • 1 tsp sugar (optional, to balance acidity)
  • ½ tsp dried basil (or 1 tbsp fresh basil)
  • ½ cup heavy cream (optional, for creaminess)
  • Salt & pepper (to taste)

Instructions:

  1. Sauté the Aromatics: In a pot, heat olive oil over medium heat. Add onion and sauté until soft (about 5 minutes). Stir in garlic and cook for another minute.
  2. Add Tomatoes & Broth: Pour in crushed tomatoes and broth. Add sugar, basil, salt, and pepper. Stir well.
  3. Simmer: Bring to a boil, then reduce heat and let it simmer for 15–20 minutes.
  4. Blend (Optional): For a smooth soup, blend with an immersion blender or in batches using a regular blender.
  5. Add Cream (Optional): Stir in heavy cream for a creamy texture.
  6. Serve & Enjoy: Ladle into bowls and serve warm with grilled cheese sandwiches.
