This high-protein, low-carb dish is perfect for a balanced and satisfying meal!

Ingredients:

For the Chicken:

  • 1 boneless, skinless chicken breast
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp dried oregano (or thyme)
  • Salt & black pepper (to taste)

For the Steamed Veggies:

  • ½ cup broccoli florets
  • ½ cup carrot slices
  • ½ cup zucchini (sliced)
  • ½ cup bell peppers (sliced)
  • 1 tbsp butter or olive oil (optional, for flavor)
  • Salt & pepper (to taste)

Instructions:

  1. Marinate the Chicken: In a bowl, mix olive oil, lemon juice, garlic powder, paprika, oregano, salt, and pepper. Coat the chicken and let it marinate for at least 15 minutes (or overnight for more flavor).
  2. Grill the Chicken: Preheat a grill or pan over medium heat. Cook the chicken for about 6–7 minutes per side until fully cooked (internal temperature 165°F/75°C). Let it rest for a few minutes before slicing.
  3. Steam the Veggies: Bring water to a boil in a steamer or pot with a steaming basket. Add the veggies and steam for 5–7 minutes until tender but still crisp. Toss with butter or olive oil, salt, and pepper if desired.
  4. Serve & Enjoy: Plate the sliced chicken with the steamed veggies and enjoy a healthy, balanced meal!
