Mediterranean Tuna Salad :

A Refreshing & Protein-Packed Meal!

This vibrant salad is bursting with fresh flavors and Mediterranean goodness!

Ingredients:

  • 1 can (5 oz) tuna (drained)
  • ½ cup cherry tomatoes (halved)
  • ¼ cup cucumber (diced)
  • ¼ cup red onion (thinly sliced)
  • ¼ cup Kalamata olives (sliced)
  • ¼ cup feta cheese (crumbled)
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp capers (optional)

For the Dressing:

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ½ tsp Dijon mustard
  • ½ tsp dried oregano
  • Salt & black pepper (to taste)

Instructions:

  1. Prepare the Salad: In a large bowl, combine tuna, cherry tomatoes, cucumber, red onion, olives, feta, parsley, and capers.
  2. Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, oregano, salt, and pepper.
  3. Combine & Toss: Pour the dressing over the salad and toss gently to combine.
  4. Serve & Enjoy: Serve on its own, over mixed greens, or with whole-grain bread.
