Start your day with this protein-packed, flavor-loaded burrito!

Ingredients:

  • 1 large tortilla (whole wheat or regular)
  • 2 eggs
  • 1 tbsp milk (optional, for fluffier eggs)
  • ¼ cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • ¼ cup salsa (mild or spicy)
  • ¼ cup black beans (optional)
  • ¼ avocado (sliced, optional)
  • 1 tbsp butter or olive oil
  • Salt & black pepper (to taste)

Instructions:

  1. Scramble the Eggs:
    • In a bowl, whisk eggs with milk, salt, and pepper.
    • Heat butter or olive oil in a pan over medium heat.
    • Pour in the eggs and cook, stirring gently, until just set.
  2. Assemble the Burrito:
    • Warm the tortilla in a dry pan or microwave for a few seconds to make it pliable.
    • Layer scrambled eggs, shredded cheese, salsa, black beans, and avocado slices in the center.
  3. Wrap & Serve:
    • Fold in the sides, then roll the tortilla tightly into a burrito.
    • Optionally, toast the burrito in a pan for a crispy finish.
    • Slice in half and enjoy!
