Comforting Chicken & Rice Casserole!

A warm, hearty dish perfect for busy weeknights or family gatherings!

Ingredients:

  • 2 cups elbow macaroni (or any pasta of choice)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk (whole milk for creaminess)
  • 2 cups shredded cheddar cheese (or a mix of cheeses)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp mustard powder (optional, for extra flavor)
  • ¼ tsp garlic powder (optional)
  • ¼ cup grated Parmesan (optional, for extra richness)

Instructions:

  1. Cook the Pasta:
    • Bring a pot of salted water to a boil.
    • Add pasta and cook according to package instructions. Drain and set aside.
  2. Make the Cheese Sauce:
    • In a saucepan over medium heat, melt butter. Stir in flour and cook for 1 minute until slightly golden.
    • Slowly whisk in milk, stirring constantly to prevent lumps. Cook until the mixture thickens (about 3–4 minutes).
  3. Add Cheese & Seasonings:
    • Lower the heat and add shredded cheddar, stirring until melted and smooth.
    • Season with salt, pepper, mustard powder, and garlic powder.
  4. Combine & Serve:
    • Add cooked pasta to the cheese sauce and mix well.
    • Serve immediately, garnished with extra cheese or fresh parsley if desired.
