Comforting Chicken & Rice Casserole!

A warm, hearty dish perfect for busy weeknights or family gatherings!

Ingredients:

  • 2 cups cooked rice (white or brown)
  • 2 boneless, skinless chicken breasts (cubed)
  • 1 cup mixed vegetables (peas, carrots, corn, or your choice)
  • 1 can (10.5 oz) cream of chicken soup (or homemade)
  • 1 cup chicken broth (or milk for creamier texture)
  • ½ cup shredded cheddar cheese (optional)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme (or Italian seasoning)
  • ½ cup breadcrumbs (optional, for a crispy topping)
  • 1 tbsp butter (melted, if using breadcrumbs)

Instructions:

  1. Preheat Oven:
    • Set oven to 375°F (190°C).
  2. Prepare the Mixture:
    • In a large bowl, mix cooked rice, chicken, vegetables, cream of chicken soup, and chicken broth.
    • Add garlic powder, onion powder, salt, pepper, and thyme. Stir well.
  3. Assemble the Casserole:
    • Pour the mixture into a greased 9×13-inch baking dish.
    • Sprinkle shredded cheese on top (if using).
  4. Optional Crispy Topping:
    • Mix breadcrumbs with melted butter and sprinkle over the casserole.
  5. Bake:
    • Cover with foil and bake for 25 minutes.
    • Remove foil and bake for another 10–15 minutes until golden and bubbly.
  6. Serve & Enjoy:
    • Let rest for a few minutes before serving.
