Chicken Alfredo Pasta – A Creamy, Indulgent Classic!

This rich and velvety dish combines tender grilled chicken with a luscious homemade Alfredo sauce.

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning

For the Pasta & Sauce:

  • 12 oz fettuccine (or pasta of choice)
  • 2 tbsp butter
  • 3 cloves garlic (minced)
  • 1½ cups heavy cream
  • 1 cup grated Parmesan cheese
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ tsp nutmeg (optional, for depth of flavor)
  • ½ cup pasta water (reserved from cooking)
  • Fresh parsley (for garnish)

Instructions:

1. Cook the Chicken:

  • Heat olive oil in a pan over medium heat.
  • Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  • Cook for 5–7 minutes per side until golden brown and fully cooked (internal temp: 165°F or 75°C).
  • Let rest for a few minutes, then slice into thin strips.

2. Cook the Pasta:

  • Bring a pot of salted water to a boil.
  • Cook fettuccine according to package instructions until al dente.
  • Reserve ½ cup of pasta water, then drain and set aside.

3. Make the Alfredo Sauce:

  • In a pan over medium heat, melt butter and sauté garlic until fragrant (about 1 minute).
  • Pour in heavy cream, stirring constantly. Let simmer for 2–3 minutes.
  • Add Parmesan cheese, salt, pepper, and nutmeg. Stir until smooth and creamy.
  • If the sauce is too thick, add a bit of reserved pasta water to reach the desired consistency.

4. Assemble & Serve:

  • Toss the cooked pasta in the Alfredo sauce, coating it well.
  • Top with sliced grilled chicken.
  • Garnish with fresh parsley and extra Parmesan.

  • Add sautéed mushrooms, spinach, or sun-dried tomatoes for extra flavor.
