This hearty dish layers savory meat and vegetables under a creamy mashed potato topping, making it the ultimate comfort food.
Ingredients:
For the Meat Filling:
- 1 lb (450g) ground beef or lamb
- 1 tbsp olive oil
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme (or rosemary)
- ½ tsp salt
- ½ tsp black pepper
For the Mashed Potatoes:
- 2 lbs (900g) potatoes (peeled and cubed)
- 4 tbsp butter
- ½ cup milk (or heavy cream for extra creaminess)
- ½ cup shredded cheddar cheese (optional)
- ½ tsp salt
- ½ tsp black pepper
Instructions:
1. Prepare the Mashed Potatoes:
- Boil potatoes in salted water until tender (about 15 minutes).
- Drain and mash with butter, milk, salt, and pepper until smooth.
- Stir in cheddar cheese (if using) for extra richness.
2. Cook the Meat Filling:
- Heat olive oil in a pan over medium heat.
- Add chopped onion and garlic, sauté until softened.
- Add ground beef (or lamb) and cook until browned. Drain excess fat.
- Stir in tomato paste, Worcestershire sauce, beef broth, thyme, salt, and pepper.
- Add mixed vegetables and simmer for 5 minutes until slightly thickened.
3. Assemble & Bake:
- Preheat oven to 400°F (200°C).
- Spread the meat mixture in a baking dish.
- Top evenly with mashed potatoes, smoothing with a spoon.
