Ingredients:
- 1 lb (450g) beef tenderloin or sirloin, thinly sliced into strips

- 2 cups mushrooms, sliced (button or cremini)
- 1 tsp paprika
- 1 cup beef broth
- 1 tbsp Dijon mustard
- 1 cup sour cream
- Salt and pepper, to taste
- 1 tbsp flour (optional, for thickening)
- Egg noodles or rice (for serving)
- Fresh parsley, chopped (for garnish)
Instructions:
1. Sauté the Beef:
- In a large skillet, heat 1 tablespoon of butter and olive oil over medium-high heat.
- Add the beef strips to the pan in a single layer and cook for 2-3 minutes, turning occasionally, until browned on all sides.
- Remove the beef from the skillet and set it aside.
2. Cook the Mushrooms and Onions:
- In the same skillet, add 1 tablespoon of butter.
- Add the chopped onion and sliced mushrooms to the pan and sauté for 5-7 minutes until softened and golden brown.
- Add the garlic and cook for another 1 minute until fragrant.
3. Make the Sauce:
- Sprinkle flour (if using) over the mushrooms and onions, stirring to coat. This will help thicken the sauce.
- Slowly pour in the beef broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook for 2-3 minutes.
- Stir in the Dijon mustard and cook for another 2 minutes.
4. Finish the Sauce:
- Lower the heat to medium-low and stir in the sour cream.
- Season with paprika, salt, and pepper to taste.
- Add the cooked beef back into the skillet with the sauce and cook for 2-3 minutes until the beef is heated through and tender.
