Creamy Rice Dish with Mushrooms.

Mushroom Risotto:

This Mushroom Risotto is a creamy, comforting dish full of earthy flavors from the mushrooms. Perfectly cooked arborio rice is simmered in a rich, flavorful broth and finished with Parmesan cheese for extra creaminess.

Ingredients:

For the Risotto:

  • 1 1/2 cups arborio rice
  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth (or chicken broth)
  • 2 cups mushrooms, sliced (button, cremini, or a mix of wild mushrooms)
  • 1/2 cup Parmesan cheese, grated
  • 1 tbsp butter (for finishing)

Seasonings & Garnish:

  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions:

1. Prepare the Broth:

  • In a saucepan, heat the vegetable broth over low heat and keep it warm.

2. Sauté the Aromatics:

  • In a large pan or skillet, heat olive oil or butter over medium heat.
  • Add the chopped onion and sauté for 3-4 minutes until softened.
  • Add garlic and sauté for an additional 30 seconds until fragrant.

3. Cook the Mushrooms:

  • Add the mushrooms to the pan and cook for 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and become tender.
  • Season with a pinch of salt and pepper.

4. Add the Rice:

  • Add the arborio rice to the pan with the mushrooms and stir for about 2 minutes to lightly toast the rice.

5. Cook the Risotto:

  • Begin adding the warm broth, one ladleful at a time, to the rice. Stir frequently and allow the liquid to be absorbed before adding the next ladleful. Continue this process for about 18-20 minutes, until the rice is cooked al dente and creamy.

6. Finish the Risotto:

  • Once the rice is cooked, remove the pan from the heat and stir in the Parmesan cheese and butter for extra creaminess.
  • Adjust seasoning with salt and pepper to taste.

7. Serve & Garnish:

  • Serve the risotto warm, garnished with freshly chopped parsley and additional Parmesan cheese if desired.

Tips & suggestions:

  • Mushroom Variety: Feel free to mix different types of mushrooms for a deeper flavor.
  • You can add more broth or use a splash of lemon juice for acidity.
  • Vegan Version: Replace the butter and Parmesan with vegan butter and nutritional yeast.
