Creamy Rice Dish with Mushrooms.
Mushroom Risotto:
This Mushroom Risotto is a creamy, comforting dish full of earthy flavors from the mushrooms. Perfectly cooked arborio rice is simmered in a rich, flavorful broth and finished with Parmesan cheese for extra creaminess.
Ingredients:
For the Risotto:
- 1 1/2 cups arborio rice
- 2 tbsp olive oil or butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 3 cups vegetable broth (or chicken broth)
- 2 cups mushrooms, sliced (button, cremini, or a mix of wild mushrooms)
- 1/2 cup Parmesan cheese, grated
- 1 tbsp butter (for finishing)
Seasonings & Garnish:
- Salt and pepper, to taste
- Fresh parsley, chopped (optional)
Instructions:
1. Prepare the Broth:
- In a saucepan, heat the vegetable broth over low heat and keep it warm.
2. Sauté the Aromatics:
- In a large pan or skillet, heat olive oil or butter over medium heat.
- Add the chopped onion and sauté for 3-4 minutes until softened.
- Add garlic and sauté for an additional 30 seconds until fragrant.
3. Cook the Mushrooms:
- Add the mushrooms to the pan and cook for 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and become tender.
- Season with a pinch of salt and pepper.
4. Add the Rice:
- Add the arborio rice to the pan with the mushrooms and stir for about 2 minutes to lightly toast the rice.
5. Cook the Risotto:
- Begin adding the warm broth, one ladleful at a time, to the rice. Stir frequently and allow the liquid to be absorbed before adding the next ladleful. Continue this process for about 18-20 minutes, until the rice is cooked al dente and creamy.
6. Finish the Risotto:
- Once the rice is cooked, remove the pan from the heat and stir in the Parmesan cheese and butter for extra creaminess.
- Adjust seasoning with salt and pepper to taste.
7. Serve & Garnish:
- Serve the risotto warm, garnished with freshly chopped parsley and additional Parmesan cheese if desired.
Tips & suggestions:
- Mushroom Variety: Feel free to mix different types of mushrooms for a deeper flavor.
- You can add more broth or use a splash of lemon juice for acidity.
- Vegan Version: Replace the butter and Parmesan with vegan butter and nutritional yeast.
