Ingredients:
For the Grilled Steak:
- 2 boneless ribeye steaks (or your preferred cut)
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp fresh rosemary or thyme (or 1/2 tsp dried)
- Salt and pepper, to taste
For the Roasted Potatoes:
- 4 medium russet potatoes, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried rosemary (optional)
- Salt and pepper, to taste
Instructions:
1. Prepare the Potatoes:
- Preheat your oven to 400°F (200°C).
- Wash and peel (optional) the potatoes, then cut them into 1-inch cubes.
- Toss the potato cubes in olive oil, garlic powder, paprika, rosemary, salt, and pepper.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 30-35 minutes, flipping halfway through, until golden and crispy on the edges.
2. Prepare the Steak:
- While the potatoes are roasting, prepare the steaks.
- Rub both sides of the steaks with olive oil, minced garlic, and fresh rosemary (or thyme).
- Season generously with salt and pepper on both sides.
3. Grill the Steak:
- Preheat your grill or grill pan to medium-high heat.
- Place the steaks on the grill and cook for about 4-5 minutes per side for medium-rare, or longer depending on your desired level of doneness.
- Once cooked to your liking, remove the steaks from the grill and let them rest for about 5 minutes before serving.

- Plate the grilled steaks alongside the roasted potatoes.
