Hummus & Veggie Wrap:

This fresh and flavorful wrap is packed with creamy hummus, crisp veggies, and soft tortillas, making it a perfect quick lunch or light dinner. It’s vegan, nutritious, and easy to customize!

Ingredients:

For the Wraps:

  • 2 large whole wheat or regular tortillas
  • 1/2 cup hummus (store-bought or homemade)
  • 1/2 cup shredded carrots
  • 1/2 cucumber, thinly sliced
  • 1/2 bell pepper (red, yellow, or green), thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/2 avocado, sliced (optional)
  • 1/2 cup baby spinach or lettuce
  • 1/4 cup feta cheese (optional, for extra flavor)

Optional Additions:

  • 1/2 cup chickpeas, mashed or whole (for extra protein)
  • 1 tbsp tahini or Greek yogurt drizzle
  • A pinch of salt, black pepper, and red pepper flakes

Instructions:

1. Prepare the Ingredients:

  • Wash and slice all veggies into thin strips.

2. Assemble the Wrap:

  • Spread hummus evenly over each tortilla.
  • Layer with spinach/lettuce, carrots, cucumbers, bell peppers, red onion, and avocado.
  • Sprinkle with feta cheese and season with salt, pepper, and red pepper flakes.

3. Roll the Wrap:

  • Fold in the sides slightly, then roll tightly from the bottom up like a burrito.
  • Slice in half for easy serving.

4. Serve & Enjoy:
