BBQ Chicken Sandwich:

This BBQ Chicken Sandwich is tender, smoky, and bursting with flavor! It features slow-cooked, shredded chicken tossed in a rich BBQ sauce, served on a soft bun, and topped with a crunchy slaw for the perfect balance of textures.

Ingredients:

1- For the BBQ Chicken:

  • 2 chicken breasts (or 3 boneless thighs)
  • 1 cup BBQ sauce (store-bought or homemade)
  • 1/2 cup chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

2- For the Slaw (Optional but Recommended!):

  • 2 cups shredded cabbage (green, red, or mixed)
  • 1/2 cup carrots, shredded
  • 2 tbsp mayonnaise or Greek yogurt
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1/4 tsp salt

3- For Serving:

  • 4 brioche or hamburger buns
  • Pickles (optional)

Instructions:

1. Cook the Chicken:

Slow Cooker:

  • Place chicken in a slow cooker with BBQ sauce, broth, vinegar, brown sugar, and seasonings.
  • Cover and cook on low for 4-6 hours or high for 2-3 hours until tender.

Stovetop:

  • Place ingredients in a pot, bring to a simmer, and cover.
  • Cook for 25-30 minutes until chicken is fully cooked.

2. Shred the Chicken:

  • Once cooked, shred the chicken using two forks.
  • Stir it back into the sauce and let it soak for 5 minutes.

3. Make the Slaw (Optional but Delicious!):

  • In a bowl, mix cabbage, carrots, mayo, vinegar, honey, and salt.
  • Toss well and let it sit for 10 minutes for the flavors to meld.

4. Assemble the Sandwiches:

  • Toast the buns lightly.
  • Pile the BBQ chicken onto the bottom half.
  • Add slaw and pickles (if using).
  • Top with the other half of the bun.

5. Serve & Enjoy!

  • Serve with fries, coleslaw, or a side salad for a full meal.
