BBQ Chicken Sandwich:
This BBQ Chicken Sandwich is tender, smoky, and bursting with flavor! It features slow-cooked, shredded chicken tossed in a rich BBQ sauce, served on a soft bun, and topped with a crunchy slaw for the perfect balance of textures.
Ingredients:
1- For the BBQ Chicken:
- 2 chicken breasts (or 3 boneless thighs)
- 1 cup BBQ sauce (store-bought or homemade)
- 1/2 cup chicken broth
- 1 tbsp apple cider vinegar
- 1 tbsp brown sugar
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
2- For the Slaw (Optional but Recommended!):
- 2 cups shredded cabbage (green, red, or mixed)
- 1/2 cup carrots, shredded
- 2 tbsp mayonnaise or Greek yogurt
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1/4 tsp salt
3- For Serving:
- 4 brioche or hamburger buns
- Pickles (optional)
Instructions:
1. Cook the Chicken:
Slow Cooker:
- Place chicken in a slow cooker with BBQ sauce, broth, vinegar, brown sugar, and seasonings.
- Cover and cook on low for 4-6 hours or high for 2-3 hours until tender.
Stovetop:
- Place ingredients in a pot, bring to a simmer, and cover.
- Cook for 25-30 minutes until chicken is fully cooked.
2. Shred the Chicken:
- Once cooked, shred the chicken using two forks.
- Stir it back into the sauce and let it soak for 5 minutes.
3. Make the Slaw (Optional but Delicious!):
- In a bowl, mix cabbage, carrots, mayo, vinegar, honey, and salt.
- Toss well and let it sit for 10 minutes for the flavors to meld.
4. Assemble the Sandwiches:
- Toast the buns lightly.
