Chicken in Teriyaki Sauce Over Rice.

Teriyaki Chicken Bowl:

This Teriyaki Chicken Bowl is a delicious, quick, and healthy meal! It features juicy chicken glazed in a homemade teriyaki sauce, served over fluffy rice, and topped with fresh steamed veggies for a perfect balance of flavors and textures.

Ingredients:

1- For the Teriyaki Chicken:

  • 2 chicken breasts (or 3 boneless thighs), diced
  • 1 tbsp oil (vegetable or sesame)

2- For the Teriyaki Sauce:

  • 1/3 cup soy sauce (low-sodium preferred)
  • 1/4 cup honey or brown sugar
  • 1/4 cup water
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil (optional but recommended)
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp cornstarch + 2 tbsp water (for thickening)

3- For the Bowl:

  • 2 cups cooked rice (white, brown, or jasmine)
  • 1 cup broccoli florets, steamed
  • 1/2 cup carrots, julienned or sliced
  • 1/2 cup edamame (optional)
  • 1 tbsp sesame seeds (for garnish)
  • 2 tbsp green onions, chopped

Instructions:

1. Cook the Rice & Veggies:

  • Cook rice according to package instructions.
  • Steam broccoli, carrots, and edamame for 3-5 minutes until tender.

2. Prepare the Teriyaki Sauce:

  • In a bowl, whisk together soy sauce, honey, water, vinegar, sesame oil, garlic, and ginger.
  • In a small cup, mix cornstarch + water and set aside.

3. Cook the Chicken:

  • Heat oil in a pan over medium-high heat.
  • Add diced chicken and cook for 5-7 minutes until golden brown.

4. Add the Teriyaki Sauce:

  • Pour the teriyaki sauce over the chicken.
  • Stir in the cornstarch slurry and let simmer for 2 minutes until thickened.

5. Assemble the Bowl:

  • Divide the rice into bowls.
  • Top with teriyaki chicken and steamed veggies.
  • Sprinkle with sesame seeds and green onions.

6. Serve & Enjoy!

  • Serve warm with extra teriyaki sauce on the side.
