A Hearty & Cheesy Morning Treat.
Breakfast Quesadilla:
A quick and delicious breakfast packed with protein and flavor, this breakfast quesadilla combines melted cheese, fluffy eggs, and beans inside a crispy tortilla.
Ingredients:
- 1 large flour tortilla
- 2 eggs, scrambled
- ¼ cup black beans (or refried beans)
- ½ cup shredded cheese (cheddar, mozzarella, or Mexican blend)
- 1 tbsp butter or oil (for cooking)
- Salt & pepper, to taste
- Optional toppings: salsa, avocado, sour cream, or hot sauce
Instructions:
1. Prepare the Eggs:
- In a bowl, whisk the eggs with a pinch of salt and pepper.
- Cook in a pan over medium heat, stirring occasionally, until just set. Remove from heat.
2. Assemble the Quesadilla:
- Spread black beans evenly on half of the tortilla.
- Add the scrambled eggs on top of the beans.
- Sprinkle with cheese and fold the tortilla in half.
3. Cook Until Crispy:
- Heat butter or oil in a pan over medium heat.
- Cook the quesadilla for 2–3 minutes per side until golden brown and crispy.
4. Serve & Enjoy:
- Slice into wedges and serve with salsa, avocado, sour cream, or hot sauce.

- For extra protein, add cooked chicken, sausage, or beef.
- For more veggies, add sautéed peppers, onions, or spinach.
