Ingredients:

  • 1 cup cornmeal

  • 1 cup milk (or buttermilk for extra richness)
  • 1/4 cup butter, melted (plus extra for serving)

  • 1 egg

Instructions:

  1. Preheat & Prep
    • Preheat oven to 200°C (400°F).
    • Grease a baking pan or cast-iron skillet with butter.
  2. Mix Dry Ingredients
    • In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. Mix Wet Ingredients
    • In another bowl, whisk milk, melted butter, honey, and egg until smooth.
  4. Combine & Bake
    • Pour wet ingredients into dry ingredients and stir gently.
    • Transfer batter to the prepared pan and smooth the top.
    • Bake for 20-25 minutes until golden and a toothpick comes out clean.
  5. Serve Warm
    • Slice and serve warm with butter and honey drizzled on top.

Tips for the Best Cornbread

  • Use Buttermilk for Moisture: Buttermilk makes cornbread tender and enhances its slight tangy flavor. If you don’t have buttermilk, mix 1 cup of milk with 1 tbsp of lemon juice or vinegar and let it sit for 5 minutes.
  • Don’t Overmix the Batter: Stir just until combined to keep the cornbread light and fluffy. Overmixing can make it dense.
  • Preheat Your Skillet: If using a cast-iron skillet, preheat it in the oven with a bit of butter or oil. This creates a crispier crust.
