Savory Crepes with Spinach & Feta:

Savory crêpes are a delicious and elegant dish that can be enjoyed for breakfast, brunch, or even dinner. This version, filled with sautéed spinach and creamy feta cheese, combines delicate flavors with a perfectly soft and slightly crispy crêpe. It’s a great way to enjoy a nutritious and satisfying meal that feels indulgent yet light.

  • 2 eggs
  • 1 1/4 cups milk
  • 2 tbsp butter, melted
  • 1/2 tsp salt

For the Filling:

  • 1/2 cup feta cheese, crumbled
  • 1 clove garlic, minced

  • 1/4 tsp nutmeg (optional, for extra flavor)

Instructions:

  1. Prepare the Crêpe Batter
    • In a bowl, whisk together flour, eggs, milk, melted butter, and salt until smooth.
    • Let the batter rest for 15-20 minutes.
  2. Sauté the Filling
    • Heat olive oil in a pan over medium heat.
    • Add garlic and cook for 30 seconds until fragrant.
    • Stir in spinach and cook until wilted.
    • Remove from heat and mix in feta, black pepper, and nutmeg.
  3. Cook the Crêpes
    • Heat a non-stick pan over medium heat and lightly grease it.
    • Pour ¼ cup of batter, swirling to coat the pan evenly.
    • Cook for 1-2 minutes, then flip and cook for another minute.
    • Repeat with remaining batter.
  4. Assemble & Serve
    • Fill each crêpe with the spinach-feta mixture, fold or roll, and serve warm.

Tips for the Best Savory Crêpes

  • Use a Thin Batter: For delicate, lacy crêpes, make sure your batter is smooth and slightly thinner than pancake batter. Let it rest for at least 30 minutes to ensure tenderness.
  • Cook on Medium Heat: Too high heat can cause crêpes to burn quickly, so keep the temperature moderate for an even golden-brown finish.
  • Use a Non-Stick Pan: A good non-stick skillet or a crêpe pan makes flipping much easier. Lightly grease with butter for the best texture.
  • Enhance the Filling: Add garlic, caramelized onions, or a pinch of nutmeg to the spinach for extra depth of flavor. You can also mix in ricotta for a creamier texture.
  • Fold or Roll Creatively: Fold the crêpes into quarters for a classic look, roll them like burritos, or fold into rectangular pockets to keep the filling in place.
