Ingredients:
For the Potato Gnocchi:
- 2 large russet potatoes (about 1 lb / 450g)
- 1 cup all-purpose flour (plus extra for dusting)
- 1 egg, lightly beaten
- ½ tsp salt
For the Beef & Tomato Sauce:
- 1 tbsp olive oil
- ½ lb (225g) ground beef
- ½ small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 tbsp tomato paste
- ½ tsp dried oregano
- ½ tsp dried basil
- ½ tsp red pepper flakes (optional)
- Salt & pepper to taste
- ¼ cup grated Parmesan (for serving)
- Fresh basil (for garnish)
Instructions:
Make the Gnocchi:
- Cook the Potatoes:
- Boil whole potatoes (with skin on) for about 30 minutes until fork-tender.
- Let cool slightly, then peel and mash until smooth (or use a potato ricer for best results).
- Form the Dough:
- On a floured surface, mix mashed potatoes with flour and salt.
- Make a well in the center, add the beaten egg, and gently combine until a soft dough forms.
- Do not overwork the dough—it should be light and slightly sticky.
- Shape the Gnocchi:
- Divide dough into 4 portions and roll each into a long rope (about ¾-inch thick).
- Cut into small bite-sized pieces and roll over a fork to create ridges (optional but helps hold sauce).
- Cook the Gnocchi:
- Bring a large pot of salted water to a boil.
- Drop gnocchi in batches and cook until they float (about 2 minutes). Remove with a slotted spoon.
Make the Beef & Tomato Sauce:
- Cook the Beef:
- Heat olive oil in a pan over medium heat.
- Sauté onion until soft, then add garlic and cook for 1 more minute.
- Add ground beef, breaking it up, and cook until browned.
- Simmer the Sauce:
- Stir in tomato paste, crushed tomatoes, oregano, basil, red pepper flakes, salt, and pepper.
- Simmer for 15-20 minutes, stirring occasionally.
Assemble & Serve:
- Toss cooked gnocchi in the beef sauce and gently stir to coat.
- Serve warm with grated Parmesan and fresh basil.
Enjoy this comforting, homemade Italian-inspired dish!
Tips for the Best Beef & Potato Gnocchi
- Use Fresh or Store-Bought Gnocchi – If making homemade gnocchi, be sure to use floury potatoes (like Russets) for the best texture. Store-bought gnocchi works great for a quick meal!
- Brown the Beef Well – Sauté the beef until it’s golden brown for extra depth of flavor. You can also use a mix of beef and Italian sausage for more richness.
- Enhance the Sauce – A base of garlic, onions, and tomatoes adds richness. Try adding a splash of red wine or beef broth for a more complex taste.
- Balance the Texture – Pan-fry the gnocchi before adding them to the sauce for a slightly crispy exterior, or simmer them directly for a softer texture.
- Add Fresh Herbs & Cheese – Finish with fresh basil, parsley, or thyme and a sprinkle of Parmesan or Pecorino Romano for extra flavor.
Enjoy your meal!
