Beef & Potato Gnocchi:

This hearty and comforting dish combines tender potato gnocchi with savory ground beef in a rich, flavorful sauce. It’s a perfect meal for when you crave something warm, filling, and satisfying. With simple ingredients and easy preparation, it’s a great way to elevate your weeknight dinners!

Ingredients:

For the Potato Gnocchi:

  • 2 large russet potatoes (about 1 lb / 450g)
  • 1 cup all-purpose flour (plus extra for dusting)
  • 1 egg, lightly beaten
  • ½ tsp salt

For the Beef & Tomato Sauce:

  • 1 tbsp olive oil
  • ½ lb (225g) ground beef
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 tbsp tomato paste
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp red pepper flakes (optional)
  • Salt & pepper to taste
  • ¼ cup grated Parmesan (for serving)
  • Fresh basil (for garnish)

Instructions:

Make the Gnocchi:

  1. Cook the Potatoes:
    • Boil whole potatoes (with skin on) for about 30 minutes until fork-tender.
    • Let cool slightly, then peel and mash until smooth (or use a potato ricer for best results).
  2. Form the Dough:
    • On a floured surface, mix mashed potatoes with flour and salt.
    • Make a well in the center, add the beaten egg, and gently combine until a soft dough forms.
    • Do not overwork the dough—it should be light and slightly sticky.
  3. Shape the Gnocchi:
    • Divide dough into 4 portions and roll each into a long rope (about ¾-inch thick).
    • Cut into small bite-sized pieces and roll over a fork to create ridges (optional but helps hold sauce).
  4. Cook the Gnocchi:
    • Bring a large pot of salted water to a boil.
    • Drop gnocchi in batches and cook until they float (about 2 minutes). Remove with a slotted spoon.

Make the Beef & Tomato Sauce:

  1. Cook the Beef:
    • Heat olive oil in a pan over medium heat.
    • Sauté onion until soft, then add garlic and cook for 1 more minute.
    • Add ground beef, breaking it up, and cook until browned.
  2. Simmer the Sauce:
    • Stir in tomato paste, crushed tomatoes, oregano, basil, red pepper flakes, salt, and pepper.
    • Simmer for 15-20 minutes, stirring occasionally.

Assemble & Serve:

  1. Toss cooked gnocchi in the beef sauce and gently stir to coat.
  2. Serve warm with grated Parmesan and fresh basil.
