Tips for Perfect Lamb Kofta
- Use Fresh Herbs & Spices – Ground cumin, coriander, paprika, and fresh parsley or mint enhance the flavor of the kofta.
- Keep the Mixture Cold – Chilling the seasoned lamb mixture for at least 30 minutes helps it hold its shape better on skewers.
- Shape & Skewer Correctly – Wet your hands with a little water or oil before shaping the kofta to prevent sticking. If using wooden skewers, soak them in water for 30 minutes to avoid burning.
- Grill or Pan-Fry – Grill over medium-high heat or pan-fry in a hot cast-iron skillet for a crispy, charred crust while keeping the inside juicy.
- Make the Yogurt Sauce Ahead – A mix of Greek yogurt, garlic, lemon juice, cucumber, and fresh herbs makes a cooling contrast to the spiced lamb. Let it chill for deeper flavors.
Enjoy your meal!
