Ingredients:

1- For the beef filling:

  • 1 lb (450 g) ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 1 cup enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar cheese (or Mexican blend cheese)

2- For the enchiladas:

  • 10-12 corn tortillas
  • 2 cups enchilada sauce (plus more for drizzling)
  • 1 ½ cups shredded cheese (cheddar, mozzarella, or Mexican blend)
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños, diced onions, avocado

Instructions:

1. Prepare the beef filling:

  • In a large skillet, cook the ground beef over medium-high heat until browned, breaking it apart with a spoon as it cooks.
  • Drain any excess fat from the beef and add the chopped onion and minced garlic. Cook for about 3-4 minutes until the onion is softened.
  • Stir in the chili powder, cumin, paprika, salt, and pepper. Mix well and let the spices cook for about 1-2 minutes.

2. Prepare the tortillas:
