Beef & Cheese Enchiladas: The Ultimate Comfort Food!
These cheesy, saucy, and flavor-packed enchiladas are perfect for a family dinner or a fiesta night!
Ingredients:
1- For the beef filling:
- 1 lb (450 g) ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp paprika
- Salt and pepper, to taste
- 1 cup enchilada sauce (store-bought or homemade)
- 1 cup shredded cheddar cheese (or Mexican blend cheese)
2- For the enchiladas:
- 10-12 corn tortillas
- 2 cups enchilada sauce (plus more for drizzling)
- 1 ½ cups shredded cheese (cheddar, mozzarella, or Mexican blend)
- Optional toppings: sour cream, chopped cilantro, sliced jalapeños, diced onions, avocado
Instructions:
1. Prepare the beef filling:
- In a large skillet, cook the ground beef over medium-high heat until browned, breaking it apart with a spoon as it cooks.
- Drain any excess fat from the beef and add the chopped onion and minced garlic. Cook for about 3-4 minutes until the onion is softened.
- Stir in the chili powder, cumin, paprika, salt, and pepper. Mix well and let the spices cook for about 1-2 minutes.
- Pour in 1 cup of enchilada sauce, stir, and let the mixture simmer for 5 minutes, allowing the flavors to meld together.
2. Prepare the tortillas:
- Preheat the oven to 375°F (190°C).
- Lightly heat the corn tortillas in a dry skillet or microwave to make them more pliable (this will help prevent them from cracking when rolled).
- You can dip the tortillas in a little warm enchilada sauce for extra flavor, but it’s optional.
3. Assemble the enchiladas:
- Spread a small amount of enchilada sauce in the bottom of a baking dish (about 9×13 inches).
- Take a tortilla and spoon a generous amount of the beef mixture onto the center. Sprinkle with a little shredded cheese and then roll it up tightly. Place the rolled tortilla seam-side down in the baking dish.
- Repeat with the remaining tortillas and beef mixture, arranging them snugly in the dish.
4. Top the enchiladas:
- Once all the tortillas are rolled and placed in the dish, pour the remaining enchilada sauce over the top of the rolled tortillas, making sure they’re all covered.
- Sprinkle the remaining shredded cheese evenly over the top.
5. Bake:
- Cover the baking dish with foil and bake for 20 minutes.
- After 20 minutes, remove the foil and bake for another 5-10 minutes until the cheese is bubbly and golden.
6. Serve:
- Once done, remove the enchiladas from the oven and let them cool for a few minutes.
- Serve the enchiladas with your favorite toppings like sour cream, chopped cilantro, sliced jalapeños, diced onions, or avocado.
