Baked Chicken Parmesan:

This healthier take on a classic Chicken Parmesan delivers all the crunch and flavor without deep frying! Perfectly crispy, cheesy, and saucy, it’s an easy, family-friendly meal.

Ingredients:

  • 2 large boneless, skinless chicken breasts (cut in half lengthwise to make 4 thin cutlets)
  • 1 cup breadcrumbs (preferably Italian-style)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 egg
  • 2 tablespoons milk
  • ½ cup all-purpose flour
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup fresh basil or parsley (for garnish)
  • 2 tablespoons olive oil (for drizzling)

Instructions:

  1. Preheat Oven: Set your oven to 200°C (400°F) and line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Breading Stations:
    • In a shallow bowl, whisk the egg and milk together.
    • In another bowl, mix breadcrumbs, Parmesan, garlic powder, oregano, salt, and pepper.
    • Place flour in a third shallow dish.
  3. Bread the Chicken:
    • Dredge each chicken piece in the flour, shaking off excess.
    • Dip into the egg mixture, then coat thoroughly with the breadcrumb mixture, pressing gently to adhere.
  4. Bake the Chicken:
    • Place the breaded chicken on the prepared baking sheet.
    • Lightly drizzle or spray with olive oil (this helps with crispiness).
    • Bake for 20-25 minutes, flipping halfway, until golden brown and cooked through (internal temp: 75°C / 165°F).
  5. Add Sauce & Cheese:
    • Spoon marinara sauce over each chicken cutlet.
    • Sprinkle shredded mozzarella on top.
    • Return to the oven and bake for 5-7 minutes, until the cheese is melted and bubbly.
  6. Garnish & Serve:
    • Sprinkle with fresh basil or parsley.
    • Serve with pasta, salad, or garlic bread.
