  • 2 eggs
  • 1 tbsp white vinegar (for poaching eggs)
  • Freshly ground black pepper
  • Chopped chives or green onions (for garnish)

Instructions:

  1. Cook the grits – In a medium saucepan, bring water (or water + milk) to a boil. Add salt and gradually whisk in the grits to prevent lumps. Reduce heat to low and cook, stirring occasionally, for about 20-25 minutes (or according to package instructions for quick grits) until thick and creamy.
  2. Add butter & cheese – Stir in the butter and shredded cheese until melted and smooth. Keep warm on low heat.
  3. Poach the eggs – Fill a saucepan with water and bring to a gentle simmer. Add the vinegar (this helps keep the egg whites together).
