Greek Pita Pocket

Greek Pita Pocket:

A delicious Mediterranean-inspired pita stuffed with juicy grilled chicken, crisp veggies, and creamy feta—perfect for a light yet satisfying meal!

Ingredients

1- For the Grilled Chicken:

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

2- For the Pita Filling:

  • 2 pita breads (whole wheat or regular)
  • ½ cup cucumber, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ¼ cup Kalamata olives, sliced
  • ¼ cup feta cheese, crumbled
  • 1 cup shredded lettuce or baby spinach

3- For the Greek Yogurt Sauce (Tzatziki-inspired):

  • ½ cup Greek yogurt
  • 1 small garlic clove, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill or parsley, chopped
  • ¼ teaspoon salt

Instructions

  1. Marinate & Grill the Chicken:
    • In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and black pepper.
    • Coat the chicken and let it marinate for 15-30 minutes.
    • Grill over medium-high heat for 5-6 minutes per side, until fully cooked.
    • Let it rest for 5 minutes, then slice into thin strips.
  2. Make the Greek Yogurt Sauce:
    • In a small bowl, mix Greek yogurt, minced garlic, lemon juice, fresh dill, and salt.
    • Stir well and set aside.
  3. Assemble the Pita Pockets:
    • Warm the pita bread slightly for easy handling.
    • Spread Greek yogurt sauce inside each pita.
    • Stuff with grilled chicken, cucumber, tomatoes, red onion, olives, feta, and lettuce.
  4. Serve & Enjoy!
    • Serve fresh with extra sauce on the side.
