Ingredients

  • 2 large whole wheat tortillas

  • ½ cup red bell pepper, thinly sliced
  • ½ cup yellow bell pepper, thinly sliced
  • ½ cup shredded carrots
  • ½ cup purple cabbage, shredded
  • ½ small cucumber, thinly sliced
  • ¼ small red onion, thinly sliced (optional)
  • 1 handful baby spinach or arugula
  • 1 tablespoon sunflower seeds or pumpkin seeds (optional, for crunch)

For an Extra Flavor Boost (Optional):

  • 1 teaspoon lemon juice
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika or cumin

Instructions

  1. Prepare the Ingredients:
