Ingredients:
For the chicken stir-fry:
- 1 lb (450 g) boneless, skinless chicken breasts or thighs, thinly sliced
- 2 tbsp vegetable oil (or sesame oil for extra flavor)
- 1 bell pepper, sliced (any color)
- 1 medium onion, thinly sliced
- 1 medium zucchini, sliced
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 1 tbsp sesame seeds (optional, for garnish)
- 2 green onions, chopped (optional, for garnish)
For the sesame ginger sauce:
- ¼ cup soy sauce (or tamari for gluten-free)
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- 2 tbsp sesame oil
- 1 tbsp grated fresh ginger
- 2 cloves garlic, minced
- 1 tsp cornstarch (to thicken, optional)
- 2 tbsp water (or chicken broth)
Instructions:
- Make the sauce:
- In a small bowl, whisk together the soy sauce, honey (or brown sugar), rice vinegar, sesame oil, grated ginger, minced garlic, cornstarch (if using), and water. Set the sauce aside.
- Prepare the chicken:
- Heat 1 tbsp of vegetable oil or sesame oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken and stir-fry for 5-7 minutes, until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.
- Cook the vegetables:
- In the same skillet, add the remaining 1 tbsp of oil.
- Add the bell pepper, onion, and zucchini, and stir-fry for about 4-5 minutes, until the vegetables are tender-crisp.
- Combine the chicken and sauce:
- Return the cooked chicken to the skillet with the vegetables.
- Pour the prepared sesame ginger sauce over the chicken and vegetables. Stir to coat everything evenly and cook for an additional 2-3 minutes until the sauce thickens slightly and everything is heated through.
- Serve:
- Garnish with sesame seeds and chopped green onions, if desired.
- Serve the Sesame Ginger Chicken Stir-Fry over steamed rice, noodles, or on its own for a lighter meal.
