Sesame Ginger Chicken Stir-Fry:

A Quick & Flavorful Meal

This vibrant stir-fry is packed with bold flavors and colorful veggies, making it a perfect go-to meal for busy nights!

Ingredients:

For the chicken stir-fry:

  • 1 lb (450 g) boneless, skinless chicken breasts or thighs, thinly sliced
  • 2 tbsp vegetable oil (or sesame oil for extra flavor)
  • 1 bell pepper, sliced (any color)
  • 1 medium onion, thinly sliced
  • 1 medium zucchini, sliced
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 tbsp sesame seeds (optional, for garnish)
  • 2 green onions, chopped (optional, for garnish)

For the sesame ginger sauce:

  • ¼ cup soy sauce (or tamari for gluten-free)
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 1 tbsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tsp cornstarch (to thicken, optional)
  • 2 tbsp water (or chicken broth)

Instructions:

  1. Make the sauce:
    • In a small bowl, whisk together the soy sauce, honey (or brown sugar), rice vinegar, sesame oil, grated ginger, minced garlic, cornstarch (if using), and water. Set the sauce aside.
  2. Prepare the chicken:
    • Heat 1 tbsp of vegetable oil or sesame oil in a large skillet or wok over medium-high heat.
    • Add the sliced chicken and stir-fry for 5-7 minutes, until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.
  3. Cook the vegetables:
    • In the same skillet, add the remaining 1 tbsp of oil.
    • Add the bell pepper, onion, and zucchini, and stir-fry for about 4-5 minutes, until the vegetables are tender-crisp.
  4. Combine the chicken and sauce:
    • Return the cooked chicken to the skillet with the vegetables.
    • Pour the prepared sesame ginger sauce over the chicken and vegetables. Stir to coat everything evenly and cook for an additional 2-3 minutes until the sauce thickens slightly and everything is heated through.
  5. Serve:
    • Garnish with sesame seeds and chopped green onions, if desired.
    • Serve the Sesame Ginger Chicken Stir-Fry over steamed rice, noodles, or on its own for a lighter meal.
