Ingredients:
- 1 slice whole-grain or sourdough bread
- ½ ripe avocado
- 1 egg (for poaching)
- ½ tsp lemon juice
- ½ tsp olive oil (optional)
- Salt & black pepper (to taste)
- Red pepper flakes or everything bagel seasoning (optional)
- Fresh herbs (chives, cilantro, or parsley for garnish)
Instructions:
- Toast the Bread: Toast the slice of bread until golden and crispy.
- Mash the Avocado: In a small bowl, mash the avocado with lemon juice, olive oil, salt, and pepper. Spread it evenly over the toast.
- Poach the Egg:
- Bring a pot of water to a gentle simmer.
- Add a splash of vinegar (optional, to help the egg hold its shape).
