Avocado Toast with Poached Egg – A Classic & Nutritious Breakfast!

This easy-to-make dish is rich in healthy fats, protein, and fiber—perfect for a balanced start to the day!

Ingredients:

  • 1 slice whole-grain or sourdough bread
  • ½ ripe avocado
  • 1 egg (for poaching)
  • ½ tsp lemon juice
  • ½ tsp olive oil (optional)
  • Salt & black pepper (to taste)
  • Red pepper flakes or everything bagel seasoning (optional)
  • Fresh herbs (chives, cilantro, or parsley for garnish)

Instructions:

  1. Toast the Bread: Toast the slice of bread until golden and crispy.
  2. Mash the Avocado: In a small bowl, mash the avocado with lemon juice, olive oil, salt, and pepper. Spread it evenly over the toast.
  3. Poach the Egg:
    • Bring a pot of water to a gentle simmer.
    • Add a splash of vinegar (optional, to help the egg hold its shape).
    • Crack the egg into a small bowl, then gently slide it into the water.
    • Poach for 3–4 minutes until the white is set but the yolk remains runny.
    • Remove with a slotted spoon and drain excess water.
  4. Assemble & Serve: Place the poached egg on top of the avocado toast. Sprinkle with red pepper flakes or seasoning, and garnish with fresh herbs.
