Ingredients:
- 12 oz (340 g) pasta (penne, fusilli, or spaghetti work well)
- 1 block (8 oz / 225 g) feta cheese
- 2 cups cherry tomatoes, halved
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper, to taste
- Fresh basil or parsley for garnish (optional)
- 1/4 cup grated Parmesan cheese (optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- Prepare the feta and tomatoes:
- In a baking dish, place the block of feta in the center.
- Arrange the halved cherry tomatoes around the feta.
- Drizzle the olive oil over the feta and tomatoes.
- Sprinkle minced garlic, oregano, salt, and pepper on top.
- Bake in the preheated oven for about 25-30 minutes, or until the feta is golden and soft, and the tomatoes are roasted and starting to burst.
- Cook the pasta:
- While the feta and tomatoes are baking, cook your pasta according to the package instructions. Be sure to reserve 1 cup of pasta water before draining.
- Combine:
- Once the feta and tomatoes are done, remove the baking dish from the oven.
- Use a fork to break up the feta, mixing it with the tomatoes to create a creamy sauce.
- Add the drained pasta to the baking dish and toss it with the feta and tomato mixture. If the sauce is too thick, add some reserved pasta water a little at a time until you achieve your desired consistency.
