Banana Pancakes:

These flourless banana pancakes are simple, delicious, and perfect for a healthy breakfast!

Ingredients:

  • 1 ripe banana (mashed)
  • 2 large eggs
  • ½ tsp baking powder (optional, for fluffier pancakes)
  • ½ tsp vanilla extract (optional, for extra flavor)
  • ¼ tsp cinnamon (optional)
  • 1 tsp butter or coconut oil (for cooking)

Instructions:

1. Prepare the Batter:

  • In a bowl, mash the banana until smooth.
  • Add the eggs, baking powder, vanilla extract, and cinnamon.
  • Whisk until well combined.

2. Cook the Pancakes:

  • Heat a non-stick pan over medium heat and add butter or coconut oil.
  • Pour small amounts of batter to form pancakes (about 2–3 inches wide).
  • Cook for 1–2 minutes until bubbles form on the surface.
  • Flip carefully and cook for another minute until golden brown.

3. Serve & Enjoy:

  • Serve warm with honey, maple syrup, fresh fruits, or yogurt.

Tips & suggestions:

  • For extra protein, add 1 tbsp almond flour or a scoop of protein powder.
  • For a thicker texture, mix in 1 tbsp oats.
