BBQ Chicken & Corn on the Cob:

The Ultimate Summer Classic!

This juicy, smoky BBQ chicken pairs perfectly with buttery, grilled corn, making it an easy and crowd-pleasing meal!

Ingredients:

1- For the BBQ chicken:

  • 4 bone-in, skin-on chicken thighs (or breasts, if preferred)
  • ½ cup BBQ sauce (your favorite brand or homemade)
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme (optional)

2- For the corn on the cob:

  • 4 ears of corn, husked and cleaned
  • 4 tbsp unsalted butter, softened
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional)

Instructions:

  1. Prepare the chicken:
    • Preheat the grill to medium-high heat (around 375-400°F or 190-200°C).
    • Pat the chicken dry with paper towels and drizzle with olive oil. Season with salt, pepper, garlic powder, paprika, and dried thyme (if using).
    • Brush a light layer of BBQ sauce onto the chicken.
    • Place the chicken on the grill and cook for about 6-8 minutes per side, depending on thickness, until the internal temperature reaches 165°F (75°C). Brush with more BBQ sauce during the last few minutes of grilling for extra flavor.
  2. Prepare the corn:
    • While the chicken is cooking, prepare the corn on the cob. If you prefer grilling the corn directly, brush the corn with some olive oil and season with salt and pepper, and grill for about 10-15 minutes, turning every 2-3 minutes until lightly charred.
    • Alternatively, you can boil the corn in salted water for about 7-10 minutes until tender.
  3. Make the butter:
    • In a small bowl, mix the softened butter with a pinch of salt and pepper. You can also add a little garlic powder, smoked paprika, or herbs for extra flavor.
    • Once the corn is cooked, spread the butter generously on the hot corn cobs and sprinkle with chopped parsley, if desired.
  4. Serve:
    • Plate the grilled BBQ chicken with the buttery corn on the cob on the side.
    • Serve with extra BBQ sauce if you like more flavor.
