Beef & Broccoli Stir-Fry:

This savory, saucy, and tender beef stir-fry is better than takeout and ready in 30 minutes!
Ingredients:
1- For the beef:
- 1 lb (450 g) beef (flank steak, sirloin, or any tender cut), thinly sliced against the grain
- 1 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tsp sesame oil (optional)
2- For the stir-fry:
- 2 tbsp vegetable oil (or any neutral oil)
- 3 cups broccoli florets (fresh or frozen)
- 1 medium onion, sliced (optional)
- 3 cloves garlic, minced
- 1-inch piece of fresh ginger, minced
- 1 red bell pepper, sliced (optional)
3- For the sauce:
- 3 tbsp soy sauce
- 2 tbsp oyster sauce (or hoisin sauce as a substitute)
- 1 tbsp rice vinegar or white vinegar
- 1 tbsp honey or sugar (optional, for sweetness)
- 1 tsp cornstarch (to thicken)
- ½ cup beef broth or water
- 1 tsp sesame oil (optional)
4- For garnish:
- Sesame seeds (optional)
- Sliced green onions (optional)
Instructions:
- Prepare the beef:
- In a small bowl, combine the sliced beef with 1 tbsp soy sauce, cornstarch, and sesame oil. Toss to coat and let it sit for about 10-15 minutes. This helps tenderize the beef and gives it a nice texture in the stir-fry.
- Make the sauce:
- In a separate small bowl, whisk together the 3 tbsp soy sauce, oyster sauce, rice vinegar, honey (if using), cornstarch, and beef broth or water. Set the sauce aside.
- Cook the broccoli:
- Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat.
- Add the broccoli florets (and bell pepper if using) and stir-fry for about 2-3 minutes until slightly tender but still crisp.
- Add ¼ cup water and cover the skillet for 2-3 minutes to steam the broccoli. Remove the broccoli and set it aside.
- Stir-fry the beef:
- In the same skillet, add the remaining 1 tbsp of vegetable oil.
- Add the sliced beef in a single layer and cook for 2-3 minutes until browned on all sides, stirring occasionally.
- Add the minced garlic and ginger, and stir-fry for an additional 30 seconds until fragrant.
- Combine the beef and broccoli:
- Return the cooked broccoli to the skillet with the beef.
- Pour the prepared sauce over the beef and broccoli, stirring to coat everything evenly.
- Cook for another 1-2 minutes, allowing the sauce to thicken and the beef and broccoli to absorb the flavors.
- Serve:
- Serve the beef and broccoli stir-fry hot, garnished with sesame seeds and sliced green onions if desired.
