Beef Stroganoff

Tender Beef in a Creamy Mushroom Sauce.

Beef Stroganoff:

This Beef Stroganoff is a classic, comforting dish featuring tender beef in a creamy, flavorful mushroom sauce, perfect for serving over egg noodles or rice. It’s rich, hearty, and incredibly satisfying.

Ingredients:

  • 1 lb (450g) beef tenderloin or sirloin, thinly sliced into strips
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced (button or cremini)
  • 1 tsp paprika
  • 1 cup beef broth
  • 1 tbsp Dijon mustard
  • 1 cup sour cream
  • Salt and pepper, to taste
  • 1 tbsp flour (optional, for thickening)
  • Egg noodles or rice (for serving)
  • Fresh parsley, chopped (for garnish)

Instructions:

1. Sauté the Beef:

  • In a large skillet, heat 1 tablespoon of butter and olive oil over medium-high heat.
  • Add the beef strips to the pan in a single layer and cook for 2-3 minutes, turning occasionally, until browned on all sides.
  • Remove the beef from the skillet and set it aside.

2. Cook the Mushrooms and Onions:

  • In the same skillet, add 1 tablespoon of butter.
  • Add the chopped onion and sliced mushrooms to the pan and sauté for 5-7 minutes until softened and golden brown.
  • Add the garlic and cook for another 1 minute until fragrant.

3. Make the Sauce:

  • Sprinkle flour (if using) over the mushrooms and onions, stirring to coat. This will help thicken the sauce.
  • Slowly pour in the beef broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook for 2-3 minutes.
  • Stir in the Dijon mustard and cook for another 2 minutes.

4. Finish the Sauce:

  • Lower the heat to medium-low and stir in the sour cream.
  • Season with paprika, salt, and pepper to taste.
  • Add the cooked beef back into the skillet with the sauce and cook for 2-3 minutes until the beef is heated through and tender.

5. Serve:

  • Serve the beef stroganoff over egg noodles, rice, or mashed potatoes.
  • Garnish with freshly chopped parsley.

Tips & suggestions:

  • For extra flavor, you can add a splash of lemon along with the beef broth.
  • To make it lighter, swap the sour cream for Greek yogurt.
  • If you don’t have beef broth, you can use chicken broth as a substitute.
