Breakfast Quesadilla

A Hearty & Cheesy Morning Treat.

Breakfast Quesadilla:

A quick and delicious breakfast packed with protein and flavor, this breakfast quesadilla combines melted cheese, fluffy eggs, and beans inside a crispy tortilla.

Ingredients:

  • 1 large flour tortilla
  • 2 eggs, scrambled
  • ¼ cup black beans (or refried beans)
  • ½ cup shredded cheese (cheddar, mozzarella, or Mexican blend)
  • 1 tbsp butter or oil (for cooking)
  • Salt & pepper, to taste
  • Optional toppings: salsa, avocado, sour cream, or hot sauce

Instructions:

1. Prepare the Eggs:

  • In a bowl, whisk the eggs with a pinch of salt and pepper.
  • Cook in a pan over medium heat, stirring occasionally, until just set. Remove from heat.

2. Assemble the Quesadilla:

  • Spread black beans evenly on half of the tortilla.
  • Add the scrambled eggs on top of the beans.
  • Sprinkle with cheese and fold the tortilla in half.

3. Cook Until Crispy:

  • Heat butter or oil in a pan over medium heat.
  • Cook the quesadilla for 2–3 minutes per side until golden brown and crispy.

4. Serve & Enjoy:

  • Slice into wedges and serve with salsa, avocado, sour cream, or hot sauce.

Tips & suggestions:

  • For extra protein, add cooked chicken, sausage, or beef.
  • For more veggies, add sautéed peppers, onions, or spinach.
  • For a spicy kick, mix in some jalapeños or hot sauce before folding.
