Chicken Fajitas

Grilled Chicken with Peppers and Onions in a Tortilla.

Chicken Fajitas:

This quick and flavorful dish features juicy grilled chicken, sautéed bell peppers and onions, all wrapped in a warm soft tortilla. Perfect for a weekend meal!

Ingredients:

1- For the Chicken:

  • 2 chicken breasts, sliced into strips
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

2- For the Fajita Veggies:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 tbsp olive oil
  • 1/2 tsp salt & black pepper

3- For Serving:

  • 4 flour tortillas (or corn tortillas)
  • 1/2 cup sour cream (optional)
  • 1/2 cup guacamole (optional)
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions:

1. Marinate the Chicken:

  • In a bowl, mix olive oil, lime juice, and all the spices.
  • Add the chicken strips and toss to coat.
  • Let marinate for 15-30 minutes (optional but recommended for extra flavor).

2. Cook the Chicken:

  • Heat a large skillet over medium-high heat.
  • Cook the chicken strips for 5-7 minutes, stirring occasionally, until golden brown and cooked through.
  • Remove from the pan and set aside.

3. Sauté the Peppers & Onions:

  • In the same pan, add olive oil, then toss in the bell peppers and onions.
  • Cook for 5 minutes, stirring until slightly tender but still crisp.
  • Season with salt & pepper.

4. Assemble the Fajitas:

  • Warm the tortillas in a dry pan or microwave for a few seconds.
  • Fill each tortilla with chicken, sautéed peppers & onions.
  • Top with sour cream, guacamole, shredded cheese, and fresh cilantro (optional).

5. Serve & Enjoy:

  • Serve with lime wedges for a fresh, zesty kick!

Tips & suggestions:

  • Want it spicier? – Add red pepper flakes or hot sauce.
  • Make it low-carb – Serve in lettuce wraps instead of tortillas.
  • Add more toppings – Try pico de gallo, jalapeños, or avocado slices.
