Chicken & Mango Salsa Wrap:

A delicious and refreshing wrap that combines juicy grilled chicken with a vibrant mango salsa—perfect for a light and satisfying meal!

Ingredients

1- For the Grilled Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper

2- For the Mango Salsa:

  • 1 ripe mango, diced
  • ½ small red bell pepper, finely chopped
  • ¼ small red onion, finely chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon lime juice
  • ½ teaspoon salt
  • ¼ teaspoon chili flakes (optional, for heat)

3- For the Wraps:

  • 2 large tortillas (whole wheat or regular)
  • ½ cup shredded lettuce or spinach
  • ¼ cup sour cream or Greek yogurt (optional)
  • ¼ cup shredded cheese (cheddar or Monterey Jack, optional)

Instructions

  1. Marinate & Grill the Chicken:
    • In a bowl, mix olive oil, lime juice, garlic powder, paprika, cumin, salt, and pepper.
    • Coat chicken in the marinade and let it sit for 15 minutes.
    • Heat a grill pan or skillet over medium-high heat.
    • Cook chicken for 4-5 minutes per side, until fully cooked (internal temp: 75°C / 165°F).
    • Let it rest for 5 minutes, then slice into strips.
  2. Make the Mango Salsa:
    • In a bowl, combine mango, red bell pepper, red onion, cilantro, lime juice, salt, and chili flakes.
    • Toss well and let it sit for 5 minutes to blend flavors.
  3. Assemble the Wraps:
    • Warm the tortillas slightly for easy folding.
    • Spread a layer of sour cream or Greek yogurt (if using).
    • Add shredded lettuce, then sliced grilled chicken.
    • Spoon over the mango salsa and sprinkle with shredded cheese (if using).
  4. Wrap & Serve:
    • Fold in the sides, then roll up tightly.
    • Slice in half and enjoy immediately!
