Ingredients
1- For the Grilled Chicken:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon lime juice
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon cumin
- ½ teaspoon salt
- ½ teaspoon black pepper
2- For the Mango Salsa:
- 1 ripe mango, diced
- ½ small red bell pepper, finely chopped
- ¼ small red onion, finely chopped
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon lime juice
- ½ teaspoon salt
- ¼ teaspoon chili flakes (optional, for heat)
3- For the Wraps:
- 2 large tortillas (whole wheat or regular)
- ½ cup shredded lettuce or spinach
- ¼ cup sour cream or Greek yogurt (optional)
- ¼ cup shredded cheese (cheddar or Monterey Jack, optional)
Instructions
- Marinate & Grill the Chicken:
- In a bowl, mix olive oil, lime juice, garlic powder, paprika, cumin, salt, and pepper.
- Coat chicken in the marinade and let it sit for 15 minutes.
- Heat a grill pan or skillet over medium-high heat.
- Cook chicken for 4-5 minutes per side, until fully cooked (internal temp: 75°C / 165°F).
- Let it rest for 5 minutes, then slice into strips.
- Make the Mango Salsa:
- In a bowl, combine mango, red bell pepper, red onion, cilantro, lime juice, salt, and chili flakes.
- Toss well and let it sit for 5 minutes to blend flavors.
- Assemble the Wraps:
- Warm the tortillas slightly for easy folding.
- Spread a layer of sour cream or Greek yogurt (if using).
- Add shredded lettuce, then sliced grilled chicken.
- Spoon over the mango salsa and sprinkle with shredded cheese (if using).
- Wrap & Serve:
- Fold in the sides, then roll up tightly.
