Chicken & Mushroom Risotto: A Creamy, Comforting Classic!

  2. Sauté the vegetables:
    • In the same skillet, add another 1 tbsp of olive oil or butter.
    • Add the chopped onion and cook for 2-3 minutes until softened.

    • Continue this process until the rice is tender and creamy, about 18-20 minutes. You may not need all the broth, so taste the rice to check for doneness.
  5. Finish the risotto:
    • Once the rice is cooked, stir in the cooked chicken, heavy cream (if using), Parmesan cheese, fresh thyme, and any remaining broth or water to achieve the desired creaminess.
