Comforting Chicken & Rice Casserole!
A warm, hearty dish perfect for busy weeknights or family gatherings!
Ingredients:
- 2 cups cooked rice (white or brown)
- 2 boneless, skinless chicken breasts (cubed)
- 1 cup mixed vegetables (peas, carrots, corn, or your choice)
- 1 can (10.5 oz) cream of chicken soup (or homemade)
- 1 cup chicken broth (or milk for creamier texture)
- ½ cup shredded cheddar cheese (optional)
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme (or Italian seasoning)
- ½ cup breadcrumbs (optional, for a crispy topping)
- 1 tbsp butter (melted, if using breadcrumbs)
Instructions:
- Preheat Oven:
- Set oven to 375°F (190°C).
- Prepare the Mixture:
- In a large bowl, mix cooked rice, chicken, vegetables, cream of chicken soup, and chicken broth.
- Add garlic powder, onion powder, salt, pepper, and thyme. Stir well.
- Assemble the Casserole:
- Pour the mixture into a greased 9×13-inch baking dish.
- Sprinkle shredded cheese on top (if using).
- Optional Crispy Topping:
- Mix breadcrumbs with melted butter and sprinkle over the casserole.
- Bake:
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for another 10–15 minutes until golden and bubbly.
