Chocolate Banana Muffins:

These moist and fluffy muffins combine the rich flavors of chocolate and banana for a delicious, comforting snack or breakfast!

Ingredients:

  • 2 ripe bananas, mashed
  • 1 cup sugar (or ¾ cup if you prefer less sweetness)
  • 2 eggs
  • ½ cup unsalted butter, melted
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • ½ cup sour cream or yogurt (for extra moisture)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
  2. Prepare Wet Ingredients: In a large bowl, mash the bananas with a fork until smooth. Add the sugar, eggs, melted butter, and vanilla extract. Mix everything until combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Mix the Ingredients: Slowly add the dry ingredients into the wet ingredients. Stir until just combined. Be careful not to overmix.
  5. Add Chocolate Chips: Gently fold in the chocolate chips and sour cream (or yogurt) for extra moisture.
  6. Fill Muffin Tin: Scoop the batter into the muffin tin, filling each cup about ¾ full.
  7. Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean (except for some melted chocolate).
  8. Cool and Serve: Let the muffins cool for a few minutes in the tin before transferring them to a wire rack to cool completely.

Baking Tips for the Best Chocolate Banana Muffins:

  • Use overripe bananas – The riper, the better! They add natural sweetness and make the muffins extra moist.
  • Don’t overmix the batter – Stir until just combined for the lightest, fluffiest muffins. Overmixing can make them dense.
  • Sour cream or yogurt = extra moisture – This is the secret to soft, tender muffins that stay fresh longer!
  • Chocolate chip magic – Try a mix of semi-sweet and dark chocolate chips for extra richness. Or add some walnuts for a crunchy twist!
  • Want a healthier version? Swap half the flour for whole wheat flour and use honey or maple syrup instead of sugar.
