- ¼ cup olive oil
- Salt and pepper, to taste
Instructions:
If using store-bought pesto:
- Cook the gnocchi:
- Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions (usually 2-3 minutes or until they float to the surface). Once cooked, drain the gnocchi and set aside, reserving a little pasta water.
- Sauté the tomatoes:
- In a large skillet, heat 2 tbsp of olive oil over medium heat.
- Add the halved cherry tomatoes and cook for 2-3 minutes until they soften and release some of their juices.
- Combine with pesto:
- Add the cooked gnocchi to the skillet with the tomatoes. Toss gently to combine.
- Stir in the pesto sauce, adding a splash of reserved pasta water if needed to make the sauce coat the gnocchi evenly.
- Season with salt and pepper to taste.
- Serve:
