Gnocchi with Pesto & Cherry Tomatoes:

Ingredients:

  • 1 lb (450 g) potato gnocchi (store-bought or homemade)
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • ½ cup pesto sauce (store-bought or homemade)
  • Salt and pepper, to taste
  • Fresh basil leaves for garnish (optional)
  • Parmesan cheese for topping (optional)

For the homemade pesto (optional):

  • 1 cup fresh basil leaves
  • ½ cup pine nuts (or walnuts)
  • 2 cloves garlic
  • ¼ cup grated Parmesan cheese
  • ¼ cup olive oil
  • Salt and pepper, to taste

Instructions:

If using store-bought pesto:

  1. Cook the gnocchi:
    • Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions (usually 2-3 minutes or until they float to the surface). Once cooked, drain the gnocchi and set aside, reserving a little pasta water.
  2. Sauté the tomatoes:
    • In a large skillet, heat 2 tbsp of olive oil over medium heat.
    • Add the halved cherry tomatoes and cook for 2-3 minutes until they soften and release some of their juices.
  3. Combine with pesto:
    • Add the cooked gnocchi to the skillet with the tomatoes. Toss gently to combine.
    • Stir in the pesto sauce, adding a splash of reserved pasta water if needed to make the sauce coat the gnocchi evenly.
    • Season with salt and pepper to taste.
  4. Serve:
    • Plate the gnocchi, and garnish with fresh basil leaves and grated Parmesan cheese, if desired.

If making homemade pesto:

  1. Make the pesto:
    • In a food processor, combine basil leaves, pine nuts, garlic, Parmesan cheese, and a pinch of salt and pepper.
    • With the processor running, slowly drizzle in the olive oil until a smooth paste forms. Adjust seasoning to taste.
  2. Follow the same steps as above, tossing the gnocchi and tomatoes in the homemade pesto sauce.
