Gnocchi with Tomato & Basil:

Soft, pillowy gnocchi coated in a fragrant tomato-basil sauce—comfort food at its finest!

Ingredients

For the Gnocchi:

  • 500g (1 lb) potato gnocchi (store-bought or homemade)
  • 1 tablespoon salt (for boiling water)

For the Tomato & Basil Sauce:

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 can (400g / 14 oz) crushed tomatoes (or 4 fresh tomatoes, diced)
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon sugar (optional, to balance acidity)
  • ½ cup fresh basil leaves, chopped
  • ¼ cup grated Parmesan cheese (optional, for serving)

Instructions

  1. Cook the Gnocchi:
    • Bring a large pot of salted water to a boil.
    • Add gnocchi and cook until they float to the surface (about 2-3 minutes).
    • Drain and set aside.
  2. Prepare the Tomato & Basil Sauce:
    • Heat olive oil in a large pan over medium heat.
    • Sauté garlic for 30 seconds until fragrant.
    • Add crushed tomatoes, salt, black pepper, red pepper flakes (if using), and sugar.
    • Let it simmer for 10 minutes, stirring occasionally.
    • Stir in fresh basil leaves and remove from heat.
  3. Combine & Serve:
    • Toss the cooked gnocchi into the tomato sauce and stir to coat evenly.
    • Serve warm, topped with grated Parmesan and extra basil.
