A delicious Mediterranean-inspired pita stuffed with juicy grilled chicken, crisp veggies, and creamy feta—perfect for a light yet satisfying meal!
Ingredients
1- For the Grilled Chicken:
- 2 boneless, skinless chicken breasts (or thighs)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
2- For the Pita Filling:
- 2 pita breads (whole wheat or regular)
- ½ cup cucumber, diced
- ½ cup cherry tomatoes, halved
- ¼ cup red onion, thinly sliced
- ¼ cup Kalamata olives, sliced
- ¼ cup feta cheese, crumbled
- 1 cup shredded lettuce or baby spinach
3- For the Greek Yogurt Sauce (Tzatziki-inspired):
- ½ cup Greek yogurt
- 1 small garlic clove, minced
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill or parsley, chopped
- ¼ teaspoon salt
Instructions
- Marinate & Grill the Chicken:
- In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and black pepper.
- Coat the chicken and let it marinate for 15-30 minutes.
- Grill over medium-high heat for 5-6 minutes per side, until fully cooked.
- Let it rest for 5 minutes, then slice into thin strips.
- Make the Greek Yogurt Sauce:
- In a small bowl, mix Greek yogurt, minced garlic, lemon juice, fresh dill, and salt.
- Stir well and set aside.
- Assemble the Pita Pockets:
- Warm the pita bread slightly for easy handling.
- Spread Greek yogurt sauce inside each pita.
- Stuff with grilled chicken, cucumber, tomatoes, red onion, olives, feta, and lettuce.
