Grilled Chicken with Asparagus:

This high-protein dish is quick to make and full of flavor, offering a healthy balance of lean protein and nutrient-rich vegetables.

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt & black pepper (to taste)
  • 1 tbsp lemon juice

For the Asparagus:

  • 1 bunch asparagus (trimmed)
  • 1 tbsp olive oil
  • 1 garlic clove (minced)
  • Salt & black pepper (to taste)
  • ½ tsp lemon zest (optional)

Instructions:

  1. Marinate the Chicken: Rub the chicken breasts with olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Let sit for 15 minutes.
  2. Grill the Chicken: Heat a grill pan or outdoor grill over medium heat. Cook the chicken for 6–7 minutes per side, or until fully cooked (internal temperature of 165°F / 75°C). Let it rest for a few minutes before slicing.
  3. Cook the Asparagus: While the chicken rests, heat olive oil in a pan over medium heat. Add minced garlic and asparagus. Sauté for 3–5 minutes until tender-crisp. Season with salt, pepper, and lemon zest.
  4. Serve & Enjoy: Plate the grilled chicken with the asparagus and serve warm.
