Ingredients:

For the Grilled Steak:

  • 2 boneless ribeye steaks (or your preferred cut)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh rosemary or thyme (or 1/2 tsp dried)
  • Salt and pepper, to taste

For the Roasted Potatoes:

  • 4 medium russet potatoes, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp dried rosemary (optional)
  • Salt and pepper, to taste

Instructions:

1. Prepare the Potatoes:

  • Preheat your oven to 400°F (200°C).
  • Wash and peel (optional) the potatoes, then cut them into 1-inch cubes.
  • Toss the potato cubes in olive oil, garlic powder, paprika, rosemary, salt, and pepper.
  • Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for 30-35 minutes, flipping halfway through, until golden and crispy on the edges.

2. Prepare the Steak:

  • While the potatoes are roasting, prepare the steaks.
  • Rub both sides of the steaks with olive oil, minced garlic, and fresh rosemary (or thyme).
  • Season generously with salt and pepper on both sides.

3. Grill the Steak:

  • Preheat your grill or grill pan to medium-high heat.
  • Place the steaks on the grill and cook for about 4-5 minutes per side for medium-rare, or longer depending on your desired level of doneness.
  • Once cooked to your liking, remove the steaks from the grill and let them rest for about 5 minutes before serving.

4. Serve:

  • Plate the grilled steaks alongside the roasted potatoes.
  • Optionally, garnish the steak with a sprig of rosemary or a pat of butter for extra richness.
