Homemade Veggie Burgers:

Wholesome and flavorful, these black bean or lentil patties make for a satisfying, protein-packed meal!

Ingredients

For the Veggie Patties (Choose Black Beans or Lentils):

  • 1 can (400g) black beans, drained & rinsed OR 1 cup cooked lentils
  • ½ cup breadcrumbs (or oat flour for gluten-free)
  • ¼ cup finely chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon olive oil (for cooking)
  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, let sit for 5 min) or 1 regular egg

For Serving:

  • 4 burger buns (toasted)
  • Lettuce or spinach
  • Sliced tomato
  • Sliced red onion
  • Pickles (optional)
  • Sliced avocado (optional)
  • Cheese (optional)
  • Condiments: ketchup, mustard, mayo, or chipotle sauce

Instructions

  1. Prepare the Patties:
    • In a bowl, mash the black beans or lentils with a fork, leaving some texture.
    • Stir in onion, garlic, cumin, paprika, salt, black pepper, soy sauce, and breadcrumbs.
    • Mix in the flax egg (or regular egg) and combine until a thick mixture forms.
    • If the mixture is too wet, add more breadcrumbs; if too dry, add a splash of water.
  2. Shape & Cook the Patties:
    • Form into 4 equal-sized patties.
    • Heat olive oil in a skillet over medium heat.
    • Cook each patty for 4-5 minutes per side, until golden brown and crispy.
  3. Assemble the Burgers:
    • Toast the burger buns for extra flavor.
    • Spread your favorite condiments on the buns.
    • Place the veggie patty on the bottom bun.
    • Top with lettuce, tomato, onion, avocado, pickles, and cheese (if using).
    • Cover with the top bun and enjoy!

Tips & Variations:

  • Make It Spicy: Add chopped jalapeños or a dash of hot sauce to the mix.
  • Crispier Patties: Bake at 200°C (400°F) for 20 minutes, flipping halfway.
  • Grill Option: Lightly brush with oil and grill for 3-4 minutes per side.
  • Meal Prep: Freeze uncooked patties for quick future meals.
