Lemon Poppy Seed Waffles

A fresh and tangy twist on your classic waffles, perfect for a sunny breakfast or brunch!

Ingredients:

  • 1 ½ cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp poppy seeds
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 large egg
  • 1 cup buttermilk (or substitute with regular milk and a splash of lemon juice)
  • 1/4 cup melted butter
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract

For the glaze (optional):

  • ½ cup powdered sugar
  • 1-2 tbsp lemon juice (adjust for desired consistency)

Instructions:

1. Prepare the Waffle Batter:

  • In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
  • In a separate bowl, beat the egg, then add the buttermilk, melted butter, lemon zest, lemon juice, and vanilla extract. Mix well.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

2. Preheat the Waffle Iron:

  • Preheat your waffle iron according to the manufacturer’s instructions.

3. Cook the Waffles:

  • Lightly grease the waffle iron with cooking spray or brush with some melted butter.
  • Pour an appropriate amount of batter onto the waffle iron (depending on its size) and cook until golden brown, usually about 3-5 minutes.

4. Make the Glaze (Optional):

  • In a small bowl, whisk together powdered sugar and lemon juice until smooth and pourable. Adjust the amount of lemon juice for your desired glaze consistency.

5. Serve:

  • Serve the waffles warm, drizzled with the lemon glaze, or simply dusted with powdered sugar. You can also add fresh berries or whipped cream for extra flavor.

  • For fluffier waffles: If you prefer extra fluffy waffles, let the batter sit for about 5 minutes before cooking.
  • Substitute buttermilk: If you don’t have buttermilk, you can add 1 tbsp of lemon juice or vinegar to 1 cup of regular milk and let it sit for 5 minutes to create a quick buttermilk substitute.
  • Topping ideas: Add a dollop of Greek yogurt or a handful of fresh fruit like strawberries or blueberries for an extra refreshing touch.
