Lentil Soup – A Comforting & Nutritious Classic!

Packed with fiber, protein, and warming spices, this hearty soup is perfect for any season.

Ingredients:

  • 1 cup lentils (green, brown, or red)
  • 1 tbsp olive oil
  • 1 small onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 3 garlic cloves (minced)
  • 1 tsp ground cumin
  • ½ tsp smoked paprika (optional)
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth (or water)
  • 1 bay leaf
  • Salt & black pepper (to taste)
  • 1 tbsp lemon juice (for brightness)
  • Fresh parsley (for garnish)

Instructions:

  1. Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5 minutes until softened.
  2. Add Garlic & Spices: Stir in garlic, cumin, and paprika. Cook for 1 minute until fragrant.
  3. Simmer the Soup: Add lentils, diced tomatoes, vegetable broth, and bay leaf. Bring to a boil, then reduce heat and let simmer for 25–30 minutes until lentils are tender.
  4. Season & Serve: Remove the bay leaf, stir in lemon juice, and season with salt and pepper. Garnish with fresh parsley.
  5. Enjoy! Serve hot with crusty bread or over rice.

Tips & suggestions:

  • Use red lentils for a creamier texture or green/brown for a chunkier soup.
  • Blend half the soup for a thicker consistency.
  • Add spinach or kale for extra greens!
  • Enjoy with crusty bread or a squeeze of lemon for a bright, refreshing touch!
