Mediterranean Tuna Salad :

This vibrant salad is bursting with fresh flavors and Mediterranean goodness!
Ingredients:
- 1 can (5 oz) tuna (drained)
- ½ cup cherry tomatoes (halved)
- ¼ cup cucumber (diced)
- ¼ cup red onion (thinly sliced)
- ¼ cup Kalamata olives (sliced)
- ¼ cup feta cheese (crumbled)
- 2 tbsp fresh parsley (chopped)
- 1 tbsp capers (optional)
For the Dressing:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp Dijon mustard
- ½ tsp dried oregano
- Salt & black pepper (to taste)
Instructions:
- Prepare the Salad: In a large bowl, combine tuna, cherry tomatoes, cucumber, red onion, olives, feta, parsley, and capers.
- Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, oregano, salt, and pepper.
