This dish is the perfect combination of juicy, garlic-infused chicken and crispy, golden potatoes—all roasted to perfection in one pan. It’s an easy, hassle-free meal that’s both comforting and delicious!
Ingredients:
- 4 boneless, skinless chicken breasts or thighs
- 1 lb (450 g) baby potatoes, halved or quartered (depending on size)
- 3 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary (or fresh, chopped)
- 1 tsp paprika
- Salt and pepper, to taste
- 1 lemon, sliced
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the oven:
- Preheat your oven to 400°F (200°C).
- Prepare the chicken and potatoes:
- In a small bowl, mix together the melted butter, olive oil, minced garlic, dried thyme, dried rosemary, paprika, salt, and pepper.
- Place the chicken breasts or thighs in a large mixing bowl and drizzle with half of the garlic butter mixture. Toss to coat the chicken evenly.
- Add the halved or quartered potatoes to the same bowl and toss with the remaining garlic butter mixture, ensuring the potatoes are well-coated.
- Assemble on a baking sheet:
- Arrange the chicken breasts or thighs on one side of a large baking sheet. Spread the seasoned potatoes on the other side, making sure everything is in an even layer.
