Ingredients:
- 1 ripe banana
- 1/2 cup rolled oats
- 1/2 cup protein powder (vanilla or chocolate works best)
- 2 large eggs
- 1/2 cup milk (or any milk of your choice)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
- Optional toppings: fresh fruit, syrup, or nut butter
Instructions:
- Prepare the Pancake Batter:
- In a blender or food processor, combine the ripe banana, oats, protein powder, eggs, milk, vanilla extract, baking powder, and a pinch of salt. Blend until smooth and the mixture is thick and pancake-batter consistency.
- Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter.
- Pour the pancake batter onto the skillet, about 1/4 cup per pancake. Cook for 2-3 minutes on each side, or until bubbles form on the surface, then flip and cook until golden brown.
- Serve:
- Stack the pancakes on a plate and serve with your favorite toppings like fresh fruit, a drizzle of maple syrup, or a spoonful of nut butter.
Tips & Variations :
- Consistency: If your batter is too thick, add a splash more milk to reach your desired consistency.
- Toppings: Try adding a spoonful of Greek yogurt for extra creaminess, or sprinkle with chia seeds for added texture.
- Flavor variations: Add cinnamon, cocoa powder, or a handful of berries into the batter for a twist on flavor!
Enjoy your meal!
