Protein Pancakes:

These protein-packed pancakes made with banana, oats, and protein powder make for a wholesome breakfast that keeps you fueled all day!

Ingredients:

  • 1 ripe banana
  • 1/2 cup rolled oats
  • 1/2 cup protein powder (vanilla or chocolate works best)
  • 2 large eggs
  • 1/2 cup milk (or any milk of your choice)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt
  • Optional toppings: fresh fruit, syrup, or nut butter

Instructions:

  1. Prepare the Pancake Batter:
    • In a blender or food processor, combine the ripe banana, oats, protein powder, eggs, milk, vanilla extract, baking powder, and a pinch of salt. Blend until smooth and the mixture is thick and pancake-batter consistency.
  2. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter.
    • Pour the pancake batter onto the skillet, about 1/4 cup per pancake. Cook for 2-3 minutes on each side, or until bubbles form on the surface, then flip and cook until golden brown.
  3. Serve:
    • Stack the pancakes on a plate and serve with your favorite toppings like fresh fruit, a drizzle of maple syrup, or a spoonful of nut butter.

  • Consistency: If your batter is too thick, add a splash more milk to reach your desired consistency.
