Ingredients

  • 2 boneless, skinless chicken breasts (or 4 boneless thighs)
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • ½ cup chicken broth (or water)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon brown sugar (optional, for sweetness)
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Sandwich:

  • 4 burger buns (brioche, whole wheat, or soft rolls)
  • 1 cup coleslaw (optional, for crunch)
  • ¼ cup sliced pickles (optional)
  • 1 tablespoon butter (for toasting buns)

Instructions

  1. Slow-Cook the Chicken (Crockpot or Stovetop):
    • Place chicken breasts or thighs in a slow cooker or a deep pot.
    • Add BBQ sauce, chicken broth, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper.
    • Cover and cook on low for 4-5 hours (or on high for 2-3 hours) until the chicken is tender and shreds easily.
    • If using a stovetop, simmer on low heat for about 45-60 minutes, covered.
  2. Shred the Chicken:
    • Once fully cooked, use two forks to shred the chicken in the sauce.
    • Stir to coat evenly in the BBQ sauce.
  3. Toast the Buns:
    • Heat a skillet over medium heat and melt butter.
    • Toast the burger buns for 1-2 minutes until golden brown.
  4. Assemble the Sandwich:
    • Place a generous portion of pulled chicken on the bottom bun.
    • Top with coleslaw and pickles (if using).
    • Cover with the top bun and serve warm.
