Pulled Chicken Sandwich:
Tender shredded chicken in a sweet and tangy BBQ sauce, served on a toasted bun with optional coleslaw and pickles for that perfect crunch.
Ingredients
For the Pulled Chicken:
- 2 boneless, skinless chicken breasts (or 4 boneless thighs)
- 1 cup BBQ sauce (your favorite brand or homemade)
- ½ cup chicken broth (or water)
- 1 tablespoon apple cider vinegar
- 1 tablespoon brown sugar (optional, for sweetness)
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
For the Sandwich:
- 4 burger buns (brioche, whole wheat, or soft rolls)
- 1 cup coleslaw (optional, for crunch)
- ¼ cup sliced pickles (optional)
- 1 tablespoon butter (for toasting buns)
Instructions
- Slow-Cook the Chicken (Crockpot or Stovetop):
- Place chicken breasts or thighs in a slow cooker or a deep pot.
- Add BBQ sauce, chicken broth, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Cover and cook on low for 4-5 hours (or on high for 2-3 hours) until the chicken is tender and shreds easily.
- If using a stovetop, simmer on low heat for about 45-60 minutes, covered.
- Shred the Chicken:
- Once fully cooked, use two forks to shred the chicken in the sauce.
- Stir to coat evenly in the BBQ sauce.
- Toast the Buns:
- Heat a skillet over medium heat and melt butter.
- Toast the burger buns for 1-2 minutes until golden brown.
- Assemble the Sandwich:
- Place a generous portion of pulled chicken on the bottom bun.
- Top with coleslaw and pickles (if using).
- Cover with the top bun and serve warm.
- Enjoy!
- Serve with fries, potato salad, or a side of extra BBQ sauce.
Pro Tips for Extra Flavor:
- Sweet & Spicy: Add a touch of hot sauce or chili flakes to the BBQ sauce if you love a little heat.
- Coleslaw Variation: Swap in a creamy ranch or a tangy vinegar-based slaw for a different twist.
- Cheese Option: Melt cheddar or pepper jack cheese over the pulled chicken before serving.
Enjoy your meal!
