Salmon & Asparagus Foil Packets:
A Light and Flavorful Meal
This simple yet elegant dish is perfect for a quick and healthy dinner. The foil locks in moisture and flavor, ensuring that the salmon stays juicy while the asparagus becomes perfectly tender.
Ingredients:
- 4 salmon fillets (6 oz each)
- 1 bunch of asparagus, trimmed and cut into 2-inch pieces
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, sliced into thin rounds
- 1 tsp dried thyme or fresh thyme (optional)
- Salt and pepper, to taste
- Fresh parsley for garnish (optional)
- 4 large sheets of aluminum foil
Instructions:
- Preheat the oven:
- Preheat your oven to 400°F (200°C).
- Prepare the foil packets:
- Tear off 4 large sheets of aluminum foil, each about 12 inches long.
- Lay a salmon fillet in the center of each sheet of foil.
- Season the salmon and vegetables:
- Drizzle each salmon fillet with olive oil and season generously with salt, pepper, and dried thyme (if using).
- Scatter the asparagus around the salmon fillets. Sprinkle the minced garlic over the fish and asparagus.
- Top each salmon fillet with a few slices of lemon.
- Seal the foil packets:
- Fold up the sides of the foil over the salmon and asparagus, and then fold the edges together to seal the packets securely. Make sure the packets are closed tightly so the steam stays inside while cooking.
- Bake:
- Place the foil packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The cooking time may vary slightly depending on the thickness of the salmon fillets.
- Serve:
- Carefully open the foil packets (watch out for hot steam!) and serve the salmon and asparagus directly from the foil or transfer to plates.
- Garnish with fresh parsley and additional lemon wedges, if desired.
